Strawberry Farmer

Saturday all of us got into the yard and did yard work.  Rick did the not so fun stuff like cleaning out flower bed, laying down new mulch, etc.  Spencer and I planted!  Rick and I thought it would be a good idea for Spencer to have his very own plant to take care of and have something that he could "reap" the benefits from...waaalaaa....a strawberry plant.  He was so excited and helped in every step of the way in planting it.  He walks over to it every time he's outside and says, "It's not working!"  I guess he's needing instant gratification.  Ha!

Menu Plan 05.27.12

Saturday - English muffin pizzas...toast the English muffins, put pizza sauce and any toppings you want and then cheese and put back in the oven until cheese is melted.  It's a fav around here!

Another year in the books...

11 years in the bag for me and another fantastic school year in the bag for Spencer.  Friday was his last day in his room and he will be moving up to the Pre-K room next week.  Spencer calls it the "big boy" room.  Yes son, you're a big boy and I don't know how your mama is going to hold it together from here on out!

We were blessed with such great teachers this year.  Spencer leaves this room knowing how to write his name, pick words and tell you what letter they start with, knows about 6 colors in Spanish and tons of other things.  The friends he's made in this class are so special.  He's really blossomed and made really good friends.  As he moves to the "big boy" room next week, none of his friends from this class will be in his new class.  I'm not sure he's ready for that, but he does know some of the kids in his new class. 

Their last week they got to do special things every day with a luau party on Friday. 


Monday was hat day...tough cowboy, huh?


Tuesday was crazy hair day.


Wednesday was pink day (their last color to review).

Thursday was superhero day and Spencer could hardly wait for this day so he could wear his cape to school.

On Friday, they had their luau party.

Swim Party

Spencer had his first swim party since the one two years ago that scared him to death.  I was apprehensive to say the least because it was at the same place.  But, this party was for his girlfriend, Braylee.  These two love each other and I'm so glad he has a sweet friend in Braylee. 

The second we rounded the corner and he saw it was at the same place as the one two years ago, he looked at me and said, "No, mama."  Oh great.  But, Braylee spotted us clear across the pool and tore across the pool to see Spencer.  He still wasn't sure.  But, once his other friends started showing up, he was good.  It did take him some time to warm up to the idea, but he ended up having a blast!  He has another party there in two weeks and he's ready to go NOW!

Meal Plan 05.20.12

Saturday - Rudy's BBQ

Sunday - burgers on the grill and parmesan fries

Monday - tilapia Veracruz

Tuesday - Southwest chopped chicken salad




Wednesday - Chinese cabbage salad w/chicken



Thursday - Slow cooker chicken ceasar sandwiches



Friday - tuna sandwiches and tomato soup


Making this for Spencer's class on Wednesday since it's "Pink Day".  I'm substituting strawberry cake for the red velvet cake.



And making this to bring to school so maybe we can actually make it through the last week of school!

Spencer-isms

No meal plan this week because we really aren't making much because of the crazy schedule we have this week.  School's almost out though!!!

I've done a pretty poor job of remembering things Spencer says and I wish I would've been writing them down.  Here lately he's said some pretty funny things and I guess it's never too late to start writing them down, huh?

Last night, Spencer got into trouble and I said, "Spencer Mark!"  And then later he was getting onto me for something and said, "Mommy Mark!"

 
Spencer is so proud that he can spell his name (and so are we!).  He was spelling it over and over last night and every time he finished, he would say, "I'm a berry berry smart boy."  Think he's heard that from somewhere??  Ha!

 
When Spencer gets mad at one of us, he always tells us, "You can't come to my birthday party."  Guess he hasn't gotten the memo that he might want to invite the people that are planning his birthday party.

We've had a lot of rain lately (Thank you Jesus!) and Spencer asked why it was raining and I told him that Jesus knew we needed rain so he is sending rain.  He then said, "I will give Jesus a big hug for washing our car off."


I know there are many more and I have to be better at jotting them down.  Stay tuned for more Spencer-isms...

Lemonade Day

Saturday was National Lemonade Day (who knew?).  Well, Lubbock went all out and encouraged lemonade stands to be every where.  The YMCA offered entrepreneur classes for kids and local businesses even loaned money for start-up costs if kids needed them.  It was so cool! 

Spencer & Cash had a small stand and it lasted about an hour and a half. 






They did so great and Spencer was quite the little salesman.  He would stand on the sidewalk with his little sign and yell, "Get lemonade!  Get lemonade!" 





We were not in it to make money by any means, but ended up making $45.00.  We were too close to the local playground, so that had their attention for most of the time and they kept asking to go play.  All in all it was so fun!!

Oops, a little late with this one!

Saturday - creamy chicken and spinach flautas (I added a package of frozen spinach and man it was good!)

Sunday - meatloaf & mashed potatoes (This is the best meatloaf EVER!)

Monday - grilled chicken salads

Tuesday - everyone fends for themselves...I have NJHS induction at school this night...and it's my birthday!

Wednesday - fish tacos

Thursday - Tilapia Vera Cruz

Friday - open...perhaps a late birthday celebration??

Randomness

1 - No meal plan this week because I was out of town until Wednesday and tonight we have an event to go to for my Teacher of the Year nomination. 

2 - Sunday night we had horrible storms and even had tornado spottings.  We are those people that do not watch much local TV, so the fact that the tornado was less than a mile from us, was news to us.  The hail was so bad.  Thank you God for watching over us! 



3 - Like I said, I was out of town until Wednesday with 40 of our 9th grade girls.  We took them on college tours in San Marcos, San Antonio and Abilene.  I'm exhausted, it was super hot and I missed my guys more than I can even tell you!  Rick texted me this picture Monday night before I went to bed.  I needed this.


4 - Spencer has a color each week they focus on, as well as a number.  I made cupcakes last week when they were reviewing purple and #6.  I just used Wilton's purple food coloring to color the white cupcake batter and also used it to color the white icing.  Don't use regular food coloring (mixing red & blue) because the amount you would have to use causes it to be bitter.  I got the idea to make the numbers from here.  I used the chocolate melts instead of white chocolate chips.  Worked like a charm!
